Carbon Steel Blade Maintenance
High carbon, low chromium blades, such as those found in Messermeister’s Park Plaza Carbon blades, require extra care to prevent rust and corrosion. Seeing as they are not stainless steel, they can begin to oxidize within minutes of exposure to moisture, air and acidic foods. Washing and drying them immediately after use must be done diligently and will help slow the oxidization process. If rust spots do appear, they can be removed by applying a small amount of Barkeeper’s Friend or ZUD to a damp paper towel and rubbing the area until it disappears.
Preventative Maintenance by Forcing the Patina
To break in your high carbon blades, we recommend treating them with vinegar prior to usage. To begin forcing a protective patina, dampen a paper towel with white vinegar and rub vigorously until the entire blade is wet. Let it sit for 5 minutes before washing and immediately drying the blade. Repeat this process 2-3 times until a blueish/gray stain (a.k.a. a patina) begins to appear. This unique patina creates a protective barrier that helps to slow the oxidization process and will deepen in color over time. The knives are now ready to be used on food.
